I love kale. It is fast becoming one of my favorite things to eat and it is so good for you!
Last night I decided to make a vegan pizza which I do often. I used an Udi's crust and topped it off with Daiya cheddar cheese (which melts best in my opinion), red peppers, white onion, kale and cilantro. For the salad I used kale, onion, red peppers, grapefruit, almond slivers, lime juice, balsamic vinegar and olive oil. It is important to let the kale soften by tossing it with the olive oil and letting it stand for 10 minutes before adding in the other ingredients and then letting that marinade for another 10. It was a delicious meal and if you enjoy kale, I recommend trying it out!
p.s I based my salad off this recipe: http://www.elanaspantry.com/raw-kale-salad/ but tweaked it a bit by adding some peppers and almond slivers and used grapefruit instead of orange.
