Hi Everyone! It has been a while, almost a year since the last time I posted on the blog. This past year has been an interesting one to put it mildly. There were ups, there were downs and a few major life changes. One of them being that I have changed my diet to be predominately plant based; it is something that I have loved exploring and figuring out what works best for me in terms of my diet. It has brought out a love of cooking in me that I did not know I had and I am so excited about it!
One thing that has not changed is my love of dips and snacks so the other day I made three new dips that I am excited to share with you! The first of the three that I want to share is the Roasted Red Pepper Dip! Roasted red pepper is a flavor that I have really been into lately and I love the smell of the peppers as they are baking in the oven! This dip is creamy, tastes amazing and has only seven ingredients (most of which I already had at home).
Roasted Red Pepper Dip: Prep Time- 5 minutes/ Cook Time- 50 minutes/ TOTAL TIME- 55 minutes
Gluten Free/Dairy Free/Plant Based/Vegan/Dips/Snacks
*3 Large Bell Peppers (stems on)
*6 Cloves of Garlic (skin on)
*1 1/2 Cups of Raw Cashews (soaked for at least 4 hours OR with boiling water for 2)
*Salt to Taste
*Pepper to Taste
*1/2 teaspoon of Smoked Paprika (optional, but worth it)
* Put cashews in bowl with water and soak for 4 hours or until cashews are soft to touch (tip: if you put boiling water over the cashews the wait time is cut in half)
*Set oven to 350 degrees Fahrenheit
*Place the peppers and garlic on a baking sheet and drizzle them with olive oil. Bake in oven for around 50 minutes or until the peppers have wilted and skin has darkened. Flip the peppers halfway through (about 25 minutes on either side). Remove from the oven and allow peppers and garlic to cool.
*Once cool enough to touch, remove the skin from the garlic and remove the stems and innards of the red peppers and cut peppers in half.
*Place the roasted red peppers, garlic cloves, cashews (drained), salt, pepper and paprika into a blender or high speed food processor with 1/4 cup of water and blend until smooth or until your desired consistency.
*Place in bowl and serve with your favorite crackers,bread and veggies. Enjoy!!
