Roasted Broccoli and Avocado Salad

Hey Everyone!
Welcome back to my blog, I hope that you are all doing well. I am not sure who else can relate but broccoli has never been my favorite vegetable(not even close) and I have always preferred to eat it raw. Recently though, I have really been loving the way roasted broccoli tastes because it still has the crunch and roasting it gives it the best flavor. I paired the broccoli with some avocado and a tahini lime dressing. It was nutty, had a beautiful crunch and was so delicious plus it is so easy to make! Keep reading for recipe!

Roasted Broccoli and Avocado Salad-Prep Time-10 minutes/Cook time-20 minutes/TOTAL TIME- 30 minutes
Gluten Free/Dairy Free/Vegan/Plant Based/ Salads/Quick/Easy

Ingredients:
FOR ROASTED BROCCOLI:
*1 large head broccoli
*Dash of olive oil
*1/4 tsp garlic powder
*1/4 tsp onion powder
*Salt to taste
*Pepper to taste
*Sprinkle of sugar

FOR SALAD:
*1 Ripe avocado
*Handful of cilantro

FOR DRESSING:
*1 Lime
*1 Tbsp olive oil
*1 tsp of tahini
*1/2 tsp of gluten free soy sauce (or coconut aminos) 
*1/2 teaspoon of sweetener 
*Salt to taste 

Directions: 
* Preheat oven to 400 degrees Fahrenheit  

*Cut up broccoli into bite sized pieces and place on lined baking sheet

*Once on baking sheet, drizzle broccoli with olive oil, garlic powder, onion powder, salt, pepper, and sugar. Mix with broccoli so spices blend evenly

*Bake broccoli for about 20 minutes, turning halfway through until broccoli starts to brown and get crispy. Let cool once cooked. 

*Meanwhile, while broccoli is baking cut up your cilantro and avocado, put aside

*In a dressing mixer put in juice of one lime, olive oil, tahini, gluten free soy sauce, sweetener and salt. Shake. 

*Once broccoli is cooled, combine broccoli, avocado, cilantro and dressing. Serve immediately and enjoy!!
