Hi Everyone! I hope that you are all having a good weekend! Today I thought I would share this gorgeous tomato salad with you. I don't know about you, but I don't think there is anything better than eating a really colorful plate (or bowl) of food, it makes eating so much more enjoyable! This is an easy salad recipe that would be great in the summer at a picnic or as a last minute side dish idea.
Colorful Tomato Salad-Prep Time-15 minutes/Cook Time-0 minutes/ Total Time-15 minutes
Gluten Free/Dairy Free/Vegan/Plant Based/ Salads/Quick/Easy
For the Salad:
*1 Carton of Multi-Colored Cherry Tomatoes (Sliced)
*4 Spring Onions (Chopped)
*1 Yellow Pepper (Chopped)
*100g Pomegranate Seeds
*Handful of Cilantro
For the Dressing:
*3 Garlic Cloves (Minced)
*Juice of Half a Lemon
*1 Tbsp Apple Cider Vinegar
*2 Tbsp of Olive Oil
*1 Tbsp of Sweetener of choice
*Salt to Taste
*Start by combining all the dressing ingredients into a dressing shaker, mix together and set aside.
*Slice your tomatoes, chop the spring onions, chop the yellow pepper and cilantro and place into salad bowl. Add pomegranate seeds and mix all ingredients together.
*Add dressing to salad, mix again coating salad thoroughly.
*Place in bowls and serve immediately
This has been one of my favorite salads that I have made so far! I love the tartness of the dressing combined with the sweetness of the pomegranate seeds and the crunchiness of the peppers. It helps that this salad is also visually appealing. Like I said before, this would be great for a picnic in the summer as it has a summery feel to it.
