Hi Everyone! I hope that you are all having a great week so far! Today I am going to give you the recipe for a caramelized onion dip. I absolutely love caramelized onions on everything from in hummus to on pizzas, so naturally I was curious about this dip. This dip pairs great with crackers or gluten free (in my case) pita bread. It is only 7 ingredients and like the roasted red pepper dip it is super easy to make and so good. I definitely recommend this for a party or a potluck if you want to make something quick and easy!
Caramelized Onion Dip: Prep Time- 5 minutes/ Cook time- 20 minutes/ TOTAL TIME- 25 minutes
Gluten Free/Dairy Free/Vegan/Plant Based/Dips/Snacks
*2 teaspoons of Olive Oil
*3 Vidalia (Sweet) Onions
*6-10 dried apricots
*1/2 teaspoon of Dried Thyme
*1 teaspoon of agave (or sweetener of choice)
*Salt to taste
*Pepper to taste
*Thinly slice the sweet onions and the dried apricots
*Heat the olive oil in a skillet over medium heat, add the onions and saute for 5-10 minutes until onions begin to brown
*Add in the apricots and thyme, stir to coat. Cover and cook until onions and apricots are soft about 5-7 minutes. Add in the sweetener, coating the onions and cook for remaining 3 or 4 minutes. Onions should be golden brown and smell delicious!
*Add mixture to food processor or blender and pulse a few times through until smooth but still chunky
*Put dip in a bowl, add salt and pepper to taste. Let dip cool and serve at room temperature with crackers, veggies and pita! Enjoy
