Apologies for the lack of posts this past week, it has been a tough week to get through. I am not going to let what happened bring me down too much and am excited for what the future has in store. Life would be so boring without the curve balls and it is how you move on from them that is important.
On Tuesday last week I went and saw The Fault in Our Stars with my best friend. I was hesitant to see it because after reading the book and was nervous that I would be a mess watching it but it was a good movie and I didn't cry too much. haha.
Thursday I went to Menchies for the first time and it was awesome! Being dairy free it is always hit or miss with frozen yogurt places and it is great that they had more than one dairy free option. Yum Yum!
Friday morning I hopped on a plane to meet up with my family in Victoria for the weekend and it was exactly what I needed to remind me of what I do have. I am so lucky to have an amazing family that truly will do anything for me. It was a short trip, but a great one and it felt amazing to sit on a beach and be by the ocean for a few days. On Saturday night we went to my favorite restaurant in Victoria for Thai food and it was soooo good!!
Then we took the ferry over to Kamloops for the night and went to a cool restaurant for dinner called Frick and Frack. It had a circus vibe and it was really fun.
We drove home yesterday and it was a LONG drive, but car trips are my favorite.

Thought I would post some pictures from the weekend. Friday we bought our puppy supplies in preparation for Pippin. Yesterday I went to Jasper and went on a beautiful hike. We even saw a bear! Today I went to Sylvan lake with my best friend and spent the day relaxing in the sun!

Nast Gal is another online shopping website that I browse frequently. I had not heard about this website until Christmas last year when my cousin got me a blazer (that I LOVE) from this site. Unfortunately shipping is not free and they also charge additionally for carry over costs which can add up significantly, but I still like to look regularly to see what they have. I love kale. It is fast becoming one of my favorite things to eat and it is so good for you!
Last night I decided to make a vegan pizza which I do often. I used an Udi's crust and topped it off with Daiya cheddar cheese (which melts best in my opinion), red peppers, white onion, kale and cilantro. For the salad I used kale, onion, red peppers, grapefruit, almond slivers, lime juice, balsamic vinegar and olive oil. It is important to let the kale soften by tossing it with the olive oil and letting it stand for 10 minutes before adding in the other ingredients and then letting that marinade for another 10. It was a delicious meal and if you enjoy kale, I recommend trying it out!
p.s I based my salad off this recipe: http://www.elanaspantry.com/raw-kale-salad/ but tweaked it a bit by adding some peppers and almond slivers and used grapefruit instead of orange.
It is hard to live in the moment these days and we often take things in life for granted,especially with technology and social media making it harder to enjoy our surroundings. On Canada Day I was out all day and my phone died at around the 7 o' clock mark. At first I was upset that I would not be able to capture the fireworks on my phone, but after thinking about how many people were going to be looking through their phone screens trying to get a good picture or video instead of enjoying what was right in front of them it did not matter to me anymore.
I am just as guilty as the next person checking Facebook or Instagram on a regular basis, but is it really that important to know what people are up to all the time? Probably not. I am also aware that I am posting about this on the internet, but it is good to take a step back every once and a while and separate yourself from it, even if it is only for a night.People let life pass them by because they are too caught up with their phones or at work and do not stop to enjoy life for what it is. For me personally this is something that I would like to make a conscious effort to change.
When was the last time you stopped to watch the sunset, went for a walk just to enjoy being outdoors or had a real conversation with someone where a phone was not used at one point or another? Just some food for thought.
