Yesterday I thought I would try making caramelized onion humus and it ended up turning out great; it was super yummy and easy to make! I could eat humus any day,any time so I will definitely be making this again and this is a great recipe to bring to a party especially if like me, you have dietary restrictions but still want to participate! If you give this a try or have made any other good humus recipes, let me know!
Here are the ingredients you will need:
For the caramelized onions:
* 1 tbsp of vegan margarine (you can also use olive oil or regular butter)
* 1 medium white onion
* 1 tbsp of brown sugar
* 1 tsp of balsamic vinegar
For the humus you will need:
* 1 can of chickpeas rinsed and drained
* 1 tbsp of natural peanut butter (or tahini paste)
* 1 clove of pressed garlic
* Lemon juice
* Sea Salt
* 1/3 cup of olive oil (I ended up using closer to 1/4 cup to get the consistency that I wanted)
1. Start off by caramelizing your onions.
*Add the margarine to a pan over medium heat.
*Add in the onions, coating them in the margarine and cook them for about 5 minutes (until they become soft and turn light brown), stirring often.
*Stir in the brown sugar and balsamic vinegar until it is mixed in with the onions and cook for an additional 2 minutes.
*Remove the onions from heat, and allow them to cool
2. To prepare the humus
*Combine the chickpeas, peanut butter, the pressed garlic, your lemon juice and the sea salt into a food processor
*Turn the food processor on and slowly start adding in the olive oil through the top chute until the mixture is creamy. Add in more olive oil if desired.
*Add in the caramelized onions (leave about a Tbsp to put on the top of your humus as well) and pulse your food processor a few times to incorporate the onions
*Place your humus in a serving dish and add the leftover onions to the top. Drizzle olive oil on top.
*Serve with veggies, crackers or pita chips and enjoy!!
Looking back on the past few years the most important lesson I have learned is that settling because it feels the most comfortable or because you feel like there is not a way out is not the answer.
It is easy to just settle in for the fear of the unknown or the thoughts that you may not find any better whatever the circumstances may be. It is also easier said than done to get out of these circumstances when you are actually in them and it is so easy to point fingers and judge when you are not personally involved. You can tell others why you feel they should get out of a relationship, find a job that makes them happy or to drop friends that don't respect them until you until you are blue in the face but I encourage you to think of a time where you have also been in a similar situation and maybe be a bit more sensitive to what is going on.
Having said all that, by being in a relationship that I kept going back to even though our core values were so completely different to the point where we could not agree on anything big or small helped teach me what I want in a relationship.
By being in a work environment where others would purposely embarrass me or try to make me feel badly to make themselves feel better or more superior to a job where I am respected and liked taught me what is and is not acceptable in a place where you should enjoy going to everyday and that sometimes speaking up is the better option.
By being in friendships where I felt like I could not be 100% myself and cared way too much about what they thought of me or by being in friendships where we had nothing in common has taught me that it is okay to let go and find other friends.
Through these experiences I have learned so much and think it is so important not to settle for less and to not bend your non-negotiable's for anybody. If you are in a relationship where one person wants something but the other does not, really think about if you are okay with either outcome, if you are not maybe that relationship is not for you. If you are at a job where you are not happy, think of a solution where you will be and speak up and say something if that does not work. If you are finding it hard to connect to the friends you are spending time with, think about what your interests or hobbies are and look for friends that enjoy the same things, they are out there. Trust me. Just some food for thought.

Hello Everyone! It has been a while since I did a favorites post so here were some of my favorite things in February!!
1: NARSissist Smokey Eye Compact
I have been loving this palette since I got it for Christmas. It comes with three eyeshadows ( Madrague I, Bali and Mekong) which are great together. The eyeshadow does go on quite dark so I do not wear it during the day but when I go out, I generally will put this on. It also stays on for a long time which I like because I do not need to worry about it. This palette also comes with the Wide Contour Eyeshadow Travel Brush #43 and Via Veneto Mini Larger Than Life Long-Wear Eyeliner. I have not used the brush, but I really love the eyeliner and will be buying the full size when I run out of the mini. This is a great palette for someone that is looking for darker shades to make a smokey eye and I highly recommend it.
2. Too Faced Better Than Sex Mascara
I cannot say enough good things about this mascara, I absolutely love it and it has been a favorite of mine for quite a long time. I really like that the applicator brush is big and that it does not clump up your eyelashes which is something that really bothers me with other mascaras. I also like that the mascara itself goes on black and you do not really need more than one coat in my opinion especially if you are also putting false eyelashes on. You do need to take your time applying it because it can be a bit messy if you are in a rush but all in all this mascara is worth purchasing.
3. Urban Decay All Nighter Makeup Setting Spray
This is a new favorite as I only bought it a week ago, but this product definitely lives up to the hype. This product lowers the temperature of your makeup which is meant to keep it in place for a longer period of time and it does a great job. It is nice that when you are wearing this, you do not need to worry about how your makeup looks when you are out and about as much. It is a bit pricey for the 4 oz bottle ($36 CAD) but totally worth it if you find that you are needing to touch up a few times during the day or when you are out.
4. Bobbi Brown BB Cream SPF 35- Fair
This is another long time favorite of mine and I use it everyday. It is so important to wear makeup with SPF in it, especially if you burn easily like me! This is usually all I need as far as face makeup goes besides a little bit of setting powder. I like how easily it goes on and it does not leave my skin looking dewy which I like. As far as higher end BB Creams go this is a bit pricier than others you can get at Sephora
($53 CAD) but a little goes a long way; I use it everyday and I just bought a new one after 4 months. If you are looking for a new BB Cream and are willing to spend a bit more, I suggest trying this.
5. The Theory of Everything
This was such a great movie and if you have not seen it yet, you should. Everything about this movie was good from the it was acted to the score. Before seeing this movie I did not know much about Stephen Hawking's life and I found the movie really interesting. It is based on a book that Jane Hawking wrote called Travelling to Infinity: My Life with Stephen and since watching the movie I have been reading the book as well. Anyone that knows me well knows that I can cry fairly easily and I cried all throughout this movie. It did a beautiful job of showing how ALS has not only effected Stephen Hawking, but those close to him as well. I also thought the love story between Stephen and Jane Hawking was unique and made me think if I would be as strong as Jane if I was ever put in a similar situation. It deserves all the recognition that it has been receiving and I am looking forward to buying this movie when it comes out.
